1. Tear the roast beef into small pieces and place in a small bowl. Add the garlic powder and black pepper and toss to coat well.
2. Melt 2 tablespoons of the butter in a large nonstick skillet over medium-high heat. Add the roast beef and cook, stirring, until browned, about 2 minutes. Transfer to a bowl and keep warm.
3. Melt the remaining 1 tablespoon butter in the same skillet over medium-high heat. Add the onion and cook, stirring, until tender, about 4 minutes. Toss the onion with the meat.
4. Divide the meat mixture evenly among the tortillas, placing the mixture in the center of each. Top with the cheese dip and sprinkle with the Cheddar. Fold the tortillas over the filling and serve immediately .
Variations
Try adding sautéed sliced mushrooms or green bell pepper to the wraps for even more color and flavor.
For added zest, add a little chili powder to the meat mixture.
