Make the Dough
1. In a large bowl, combine the water, yeast and honey; let stand until foamy, about 5 minutes. Stir in the oil and salt.
2. Using a large wooden spoon, stir in 4 cups of the flour, a little at a time, until a soft dough forms. Transfer to a lightly floured surface and knead until smooth and elastic, 8 to 10 minutes, adding just enough flour to prevent stickiness.
3. Grease a large bowl. Transfer the dough to the bowl, turning to coat. Cover with plastic wrap and let rise in a warm, draft-free place until doubled in size, 1 1/2 to 2 hours.
Assembling and Baking the Pizza
1. Preheat oven to 450F. Grease a 15 x 10-inch jelly-roll pan.
2. Punch down the dough and turn onto a lightly floured surface. Roll into a large rectangle. Transfer the dough to the prepared pan. Using your fingers, press the dough to the edges of the pan.
3. Spoon the sauce onto the dough, leaving about a 1/2-inch border around the edges. Sprinkle 1/2 cup of the mozzarella over the sauce in a 5-inch square in the top left corner of pizza. Arrange the olives on the cheese square to resemble the stars on a flag. Arrange the pepperoni and remaining mozzarella in alternating horizontal stripes to cover the rest of the pizza.
4. Bake the pizza until the cheese is melted and crust is browned, 12 to 14 minutes. Transfer the pan to a wire rack and cool for 5 minutes. Transfer the pizza to a cutting board and cut and serve immediately.
Time Saver
Instead of making the dough from scratch, you can use 1 pound of prepared pizza dough. Buy it at your supermarket or local pizza parlor.
