Classic Guacamole

Makes 2 cups


Guacamole is always a crowd-pleaser. Don’t be afraid to add a little more jalapeno, if you can take the heat. Serve with fresh veggies and homemade pita chips or baked tortilla chips.   You can also dollop some guacamole on top of grilled steak or a hamburger for a flavor boost.


Ingredients
2  ripe avocados, peeled and pitted
2 tablespoons lime juice
1/2 small onion
1/2 small tomato
1 jalapeno pepper, seeded
1/2 cup chopped cilantro
2 tablespoons canned chopped green chiles
1 teaspoon salt


1. Scoop the avocado flesh into a medium bowl with a spoon. Mash with a fork and stir in the lime juice.

2. Finely chop the onion, tomato and jalapeno together. Add to the avocado mixture and stir just until combined. Add the cilantro, chiles and salt and stir to combine well. Cover the bowl with plastic wrap and chill until ready to serve.

Tip: Prepping Avocados
To easily get the flesh from an avocado, first cut it lengthwise around the seed. Twist the halves apart with your hand. Use a small knife to gently remove the seed.

Variation
For a tasty appetizer, cut the bottoms off cherry tomatoes, scoop out the seeds with a small spoon and fill each tomato with a little of the guacamole.
